Spinach Artichoke Nachos

Katie is a USC student with an affinity for cooking with cheeses. In fact, she’s branded herself as The Cheese Pusher. She mentioned that her fridge is consistently stocked with a minimum of 7 kinds of cheeses. With this in mind, she’s getting ready for Super Bowl weekend with a recipe for Spinach Artichoke Nachos that literally cuts out the dipping-middleman normally associated with flavors of this nature. She utilizes a rich combination of cream cheese, parmesan and mozzarella as the base for fresh spinach, tangy artichoke and buttery garlic. I’d love to take a dip in these nachos…hell…I’d do a couple laps in ’em.
