Here’s a Dole Whip Cocktail, But Make It New York

The weather is finally breaking in New York and my thoughts turn to outdoor dining and cold cocktails, and it gets no colder than a frozen drink made by a guy who’s last name is Snow.

Partners Harrison Snow and Jake Hodas recently opened Lullaby, a Lower East Side bar that offers an amazing cocktail program but doesn’t take itself too seriously. There are no mixologists here — just a team of great bartenders, including Brian Miller (Death & Co., Pegu Club), who’ve concocted a menu of drinks each with its own tongue-in-cheek parentheticals. There’s also a pared-down food menu of Tapas bar classics offering a few “midnight snacks” to accompany the beverages. 

Created by Snow, The Dole Whip is an alcoholic pineapple soft serve that comes in the iconically New York “We Are Happy to Serve You” cup — perfect for a summer evening in the city.

Here’s the recipe if you want to make one at home for a delicious and refreshing sip.

Ingredients:

  • .25 oz Smith & Cross rum
  • 1 oz Lemon Hart Blackpool rum
  • .25 oz Fernet Branca
  • .50 oz house coconut cream
  • .50 oz house sherry blend
  • .50 oz lime juice
  • 3 drops saline solution

Instructions: 

Add a bit of Dole Whip and shake with three cubes. Strain over Dole Whip in a paper coffee cup. Garnish with a mint sprig and toasted coconut.

The bar is also collaborating with local camera company Manual, which will provide disposable film cameras for bar-goers to use and develop the photos to collect at a later date.
