This mixture of exotic flavors are known as the Rajas Fries and hail from the FrySmith Truck. They first start off with Kennebec potatoes that have been thinly sliced and double-fried in canola oil for that added crunch. They then add fire-roasted poblano chiles, caramelized onions, shawarma-marinated steak and jack cheese!
