Crispy Smashers: Irish Road Kill

Whenever I come across the recipe for Irish Road Kill, it often comes accompanied with the tagline “The Best Potato Dish On the Planet.” While I’ve yet to try them, the recipe and photos from every process I’ve seen have always looked exquisite. The beauty in the dish is its simplicity, utilizing fresh ingredients, red skinned potatoes, olive oil, sea salt and freshly ground pepper. Our friend Dorothy Reinhold has put together a picture-heavy recipe for those of you looking to indulge in this humble food project.
