How To Make A 5-Minute Banana Pancake in a Mug

The importance of eating breakfast has been drilled into our heads since we were in elementary school. Luckily, eating breakfast food has never been a problem for me, especially because iconic breakfast foods include mountains of pancakes, piles of crispy bacon and fluffy scrambled eggs. The only bad thing is, not all breakfast foods are created equal. Fortunately, there is a healthier alternative for an all-time breakfast favorite: pancakes.

A recent study showed that eating a protein-rich egg white breakfast made with Egg Beaters® Original, instead of toaster pastries, helped young women eat 178 fewer calories throughout the day, increase their daily protein intake by 14 grams and improve key nutrients in their diets. Now, you can have a healthy, protein filled breakfast while eating your breakfast favorite out of a mug!

Instead of using whole eggs, I used Egg Beaters® Original for this 5-Minute Banana Pancake in a mug recipe, which created a very light, pillowy pancake that was rich in protein. They also made prep and clean-up super easy. If you are busy, just make the batter in advance and when you’re ready, pour it in a mug, microwave it and voilà! Your breakfast favorite will be at your fingertips in a matter of minutes – 3 to be exact.

5-Minute Banana Pancake in a Mug

Prep Time: 2 minutes

Cook Time: 3 minutes

Total Time: 5 minutes

EASY

Ingredients:

  • 1 1/2 large bananas, smashed
  • ½ cup Egg Beaters® Original
  • 2 tablespoons Greek yogurt
  • 1/3 cup flour
  • ½ teaspoon baking powder
  • Various fruit (optional)

Directions:

1.   Combine smashed banana with Egg Beaters® Original and Greek yogurt in your mug. Mix.

#SpoonTip: Mug should be 20-oz. If you don’t have a mug this size, a bowl of 20-oz. or more will work.

2.   Mix flour and baking powder into wet batter.

3.   Pour batter into a large mug and microwave for 3 minutes.

4.   If you’d like, sprinkle various fruit on top. Enjoy!
