Bacon Garlic Herb Shrimp Taco

Rubio’s Fresh Mexican Grill lives up to its name when it comes to their fresh and tasty Mexican ingredients. While I don’t patronize their locations as much as I’d like, I was pleasantly surprised to find that they had bacon on the menu via their  Bacon Garlic Herb Shrimp Tacos. The thought of adding bacon to their garlic herb shrimp was a combination too good to pass up:

The Bacon Garlic Herb Shrimp Tacos start off with corn tortillas topped with toasted cheese, grilled garlic herb shrimp, crispy bacon, cilantro and onion, cotija cheese, habanero citrus salsa, sliced avocado and a creamy chipotle picante sauce. The flavors come together wonderfully, but I can humbly say I’ve never enjoyed shrimp and bacon in the same bite, and with the binding use of the killer cream chipotle picante sauce, they flavors came together perfectly.

Count me in for an order of 12. You dig?
