This May Be The Most Decadent Cut Of Wagyu Beef You’ll Ever See

Japanese Wagyu beef is widely recognized as the cream of the crop, prized for its exceptional marbling, which is the thin, delicate lines of intramuscular fat found throughout a piece of meat. An extraordinarily marbled cut of meat yields top notch tenderness and flavor, putting Wagyu beef at a premium.

In the viral clip above from the Alpine Butcher Shop in Lowell, Massachusetts, our eyes are treated to what may be the most marbled filet of A5 Wagyu beef we’ll see online. As of now, around 4.2 million views of the Instagram Reel validate the awe-inspiring sight.

To get familiar with what exactly A5 means, Japanese Wagyu, undergoes strict grading by the Japanese Meat Grading Association. Evaluated between the sixth and seventh rib, grading hinges on Yield (meat-to-carcass ratio) and Grade (Beef Marbling Score, Beef Color Standard, Beef Fat Standard, Firmness & Texture). Wagyu undergoes grading on a scale of 1 to 5, with 5 signifying superior quality in color, texture, and fat standards. The accompanying letter grade signifies Wagyu yield, determining the portion of quality beef that can be extracted from the cattle.

A5 Wagyu demands Grade A for yield and Grade 5 across BMS, BCS, BFS, firmness, and texture, ensuring integrity, transparency, and authenticity. This means that A5 grade Wagyu Beef is top-tier.

“This is the most marbled piece of Wagyu we have ever seen in our entire lives over here,” remarked the butcher in the clip, which says a lot given his line of work. And I’d have to agree with the man, as what we witness is a cut of beef that looks to be entirely laced with exquisite marbling, to the point that the flesh is practically white with intramuscular fat AKA that good fat.
