McCormick Launches New Aji Amarillo Seasoning, Calls It The ‘2025 Flavor Of The Year’

McCormick spices have been a kitchen staple since 1889 and have grown to become the world’s largest spice company by revenue, offering a wide variety of spices, herbs, and blends like cinnamon, red pepper, black pepper, vanilla, oregano, paprika, sesame, and thyme.

Now, the iconic brand is introducing a bold new addition to its lineup: Aji Amarillo Seasoning, which launched earlier this month for a limited time.

Described by McCormick as a “sweet, spicy blend with medium heat,” Aji Amarillo combines tropical notes with oak smoke, garlic, and onion. Inspired by the Aji Amarillo pepper from Peru, this unique seasoning is perfect for enhancing seafood, poultry, sauces, and more.

McCormick has named Aji Amarillo the “2025 Flavor of the Year,” predicting it will dominate the culinary scene in the coming year. This limited-time offering will be available online in 2.11-ounce jars.
