Since I've recently been on a health fix, I've been searching out fresh, and quick recipes that I can make. Here is another that I came across for an egg salad-torta type of sandwich. Take a French roll and pack it full of egg salad gribiche (mayonnaise-style cold egg sauce), throw some arugula, lettuce, or spinach on there and slather on some dijon mustard and you're ready to grub!
