Craving: Oatmeal Pancakes

As a child, oatmeal cookies were a great treat for me. During the summer, on the days I opted to stay indoors and watch classic Nickelodeon programming, I would sit with a package of oatmeal cookies and a soda and stay glued to the television. Never did I think of pouring syrup on those puppies, frankly for the reason I didn’t want to get messy, knowing my stay on that couch could extend over the course of a couple days. Joy the Baker decided that it was time someone stepped up to the plate and combined the offerings of oatmeal cookies and pancakes into one delectable dish! Her recipe is available online, but the one thing I would personally like to add is a sprinkling of raisins and a side of root beer…but…I digress.
