If you're trying to eat a little healthier, but still want to eat something delicious, cauliflower makes a great substitute for many foods.
People often have a fear of indulging in fried rice as it is full of carbs and calories, but substitute the white rice with some cauliflower and it's actually not too bad.
A cup of white rice will usually run upward of 200 calories, while a cup of cauliflower will generally come out to about 25 calories. Not to mention cauliflower is a lot less carb-heavy than rice.
All you need is a grater, a microwave, a frying pan, soy sauce and some additional veggies to make for this recipe. Oh, and a fried egg never hurts.
