Do Want: Mini Sandwich Cookies for Dessert-Lunch
I’m the awful lunch date who orders dessert first and the actual meal (maybe) after. So these mini sandwich cookies are an absolute dream. Now we dessert fiends can pretend to eat sandwiches and appease our uptight friends who insist on “real food first,” when really, we’re biting into delicious cookies incognito. Nevermind the fact that we’ll have to figure out a way to sneak this onto restaurant menus.
Conjured up by meaghanmountford over yonder at The Decorated Cookie, the recipe is simple enough: Roll out some cookie dough, cut out little squares, pinch the sides to resemble slices of bread, then lay on some icing to “sandwich” them together. Oh my goodness, I’m so funny I cry sometimes.
