These Loaded Mashed Sweet Potatoes Will Hold You Over Until Thanksgiving

Pete Pham‘s (@pham_bot) Loaded Mashed Sweet Potatoes are just the right comfort food to hold you over until Thanksgiving.

Ready in no time, canned sweet potatoes serve as the muse for this recipe. Peter boils and then mashes them until they’re as fluffy as cumulus clouds amidst a deep blue sky. Then, milk and sour cream are mixed in to create a smooth and creamy consistency.

And of course, no potato is complete without the fixin’s! Bacon, shredded cheddar, and green onions are the best way to play up these sweet taters. Happy almost-Thanksgiving!

Loaded Mashed Sweet Potatoes

2 40-oz cans of sweet potatoes in syrup, semi-drained

1/4 cup of milk

1 tablespoon of sour cream

1 bunch of green onions

Crumbled bacon

Shredded cheddar

1)   Throw sweet potatoes—semi-drained—into a pot and boil off the remaining liquids. Cook the potatoes and mash them together until you get a soft consistency.

2)   Add milk and sour cream and stir until evenly mixed.

3)   Throw in diced onions, crumbled bacon, and shredded cheddar to your preference and mix well. Top with additional bacon pieces and a bit of cheddar and onions.
