Roy Choi Introduced Us To A Kimchi You Can Drink

When Chef Roy Choi offers to teach you about kimchi, you listen. When he hands you one you can drink, you definitely pay attention.

We recently caught up with Chef Choi, who gave our own Chris Aboubabdo a quick lesson on just how expansive the world of kimchi really is, starting with the idea that it goes far beyond the familiar jars of fermented cabbage most people picture.

“Kimchi is the process of changing vegetables and preserving vegetables,” Choi explained. “Kimchi is actually a whole universe.”

To prove his point, Choi introduced Chris to a kimchi you can drink and even demonstrated the proper way to knock it back.

The lesson offered a small glimpse into the way Choi thinks about Korean food, something Southern California will soon get to experience more of firsthand. His Las Vegas restaurant, Best Friend, is headed to OCVIBE in Anaheim, bringing Choi’s celebration of Korean food and Los Angeles culture to Orange County.

Until then, we’ll be thinking about the fact that apparently we’ve only explored a tiny corner of the kimchi universe.
