Creamed Corn Ice Cream – A Wonka Inspired Holiday Treat

Any good diet book will point out that corn is not a vegetable. Despite its glossy and colorful texture, it is a starch that often comes to our plates in the sweet variety with a high sugar content.  By this logic, holiday staple creamed corn is definitely not a vegetable although it is definitely one of my favorite side dishes.

Why fight the grain’s true nature? In that spirit, the creative minds at Unwholesome Foods have cooked up a delightful dessert remix of creamed corn. Putting standard creamed corn through an ice cream churner and freezing it seems to have paid off. It appears to retain a luscious creamy texture and receives extra points for the banana split-esque corn garnish. Barbecue sauce as hot fudge? That might be one food adventure too far for this palate.
